From the Koura press

Picked at dawn, pressed by lunch.

Eighteen families in Kfarhazir pick our olives by hand, the old way, onto nets spread under the trees. The fruit is at the press within six hours, never heated above 27°C, and bottled in dark glass the same week. This is the oil the village keeps for itself.
